Rogue

For those of you coming from Pathfinder 1st Edition, the Thief subclass is the only way in the game to get the equivalent of Slashing Grace, Fencing Grace, Dervish Dance, allowing you to use your DEX modifier instead of STR modifier for your damage rolls.

Eldritch Trickster is kind of a disaster but if you want to commit heavy to dedications and archetypes, this might be the subclass for you.

Sneak Attack can trigger multiple times in a turn as long as the enemy is flat-footed.

Rackets

Ruffian (4/5)

As a Ruffian, I'm not sure why'd you want to wear Scale Mail instead of a Breastplate.

Like most Rogues, you're still going to rely on Feint as your most reliable way to make an enemy flat-footed so Charisma is likely your second best stat.

Thief Racket (5/5)

This is the only way in the game to add your DEX modifier to damage rolls.

Level 1

More than likely, your default option should be Tumble Behind or Twin Feint. If neither of those work for your build, look at Nimble Dodge or You're Next.

Nimble Dodge (2/5) - Rogues don't get many reactions, so this is nice in that sense and I'd rather overload on Reaction options than waste the reaction... but using a Parry weapon or investing a the Raise a Shield General Feat are better options. The selling point to this Class Feat is the threat of using it.

At it's best it turns the Raise a Shield action into a Reaction and grants the +2 AC bonus to someone who doesn't have a shield. So if you were using a two-handed weapon (no shield), used your three action effectively, and only got attacked once in a round this would be a 5/5.

But think about a situation where there's a few goblins and a boss (in roughly that order). Do you use your reaction on the first goblin attack or do you save it assuming the boss will attack you? If take a few shots from the goblins and the boss doesn't attack you, you've wasted your reaction. If you use the reaction on the first attack, the rest of the goblins (and the boss) have open attacks.

Tumble Behind (3/5) (5/5 Thief) (1/5 Ruffian) - Since DEX is the key ability for most Rogues, this is a better option than Feint. You still risk an Attack of Opportunity for moving, so it's likely still smart (and safer) to use Feint.

Twin Feint (2/5) - Essentially a -2 penalty to your attack to guarantee Sneak Attack, it's a situational backup option for creatures immune to Feint. You must be dual wielding so there are some hidden drawbacks, like no shield and acquiring Potency Runes for two weapons.

You're Next (2/5) - It's for most Rogues since there's little reason to not sprinkle Intimidation into the build. One problem with it is that you should start your turn with Demoralize instead of finish it -- if you do this at the end of your turn, you don't get to take advantage of the Frightened condition you applied (but at least your team hopefully does). It's still situational, you need to trigger it and it's still a reaction, so I don't want to oversell it.

Level 2

Underhanded Assault (3/5) - Another way to help make an enemy flat footed but you can probably just flank them instead. Still, it removes part of the difficulty of the Sneak action and combines it with a melee Strike.

Level 6

Skirmish Strike (6)

Level 8

Opportune Backstab (8)

Dedications

Barbarian Dedication (3/5)

Especially useful for Ruffians, especially with a Longspear. Rage grants temporary hit points. You get access to some decent Action Feats like Sudden Charge. Barbarian Resiliency gives you a ton of extra hit points. You can get Master Fortitude at level 12. Late access to Attack of Opportunity (level 12)

Fighter (2/5) Steep prerequisites (14 STR and 14 DEX). The Dedication Feat itself practically gives you nothing (you already have so many skills and it's likely not giving you access to a weapon you didn't already have). Attack of Opportunity at 4 is okay.

Medic Dedication (1/5) Normally a really good Dedication because it grants Expert in Medicine but Rogues can do that at level 2 anyways.

Gear

Magic Items

Glamorous Buckler - A small bonus to Feint when you Raise a Shield.
